This cake is famous in Russia and well known in Eastern Europe where many different versions are known. Our version consists of six layers of pastry soaked with local raw honey which then layered up with lightly sweetened cream and yogurt filling. The components of this cake creates an irresistible soft texture which is delicately sweet and tangy at the same time. The cake is embellished with honeycomb crunch, seasonal petals and bee pollen.

White Christmas Cake

Our take on the Japanese soft cream cake, we make this with chiffon sponge layers, a light mascarpone cream and  raspberry gel. We don’t use strawberries in the winter time. The raspberries used here were sourced back in the summer from Food Circle York, grown local to us and it is unsprayed. The cake is covered with a light mascarpone cream.
